Instructions
- Combine chopped apples, water, 1/4 cup sugar, and cinnamon in a medium saucepan. Cook over medium heat, stirring occasionally, until apples are very soft, about 15-20 minutes.
- Mash the cooked apples with a fork or potato masher until smooth. Let cool completely.
- In a clean, dry bowl, beat egg whites with cream of tartar on medium speed until soft peaks form. Gradually add the 2 tablespoons of sugar, beating until stiff, glossy peaks form.
- Gently fold the cooled apple mixture into the whipped egg whites until just combined.
- Spoon into serving dishes and chill for at least 30 minutes before serving.
