- 1 9-inch baked pie crust
- 1 cup packed light brown sugar
- 1/2 cup granulated sugar
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
- 2 1/2 cups whole milk
- 4 large egg yolks, beaten

- 1 teaspoon vanilla extract (alcohol-free)
- 1 1/2 cups heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract (alcohol-free)
Instructions
- In a medium saucepan, whisk together the brown sugar, granulated sugar, flour, and salt.
- Gradually whisk in the milk until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Boil for 1 minute, stirring.
- Remove from heat. Gradually whisk a small amount of the hot mixture into the beaten egg yolks.
- Pour the egg yolk mixture back into the saucepan, whisking constantly.
- Return to medium-low heat and cook for 1-2 minutes, stirring constantly, until thickened. Do not boil.
- Remove from heat and stir in the butter and 1 teaspoon vanilla extract.
- Pour the butterscotch filling into the baked pie crust.
- Cover the surface of the filling directly with plastic wrap to prevent a skin from forming.
- Refrigerate for at least 4 hours, or until thoroughly chilled and set.
- Before serving, beat the heavy cream, powdered sugar, and 1/2 teaspoon vanilla extract in a cold bowl with cold beaters until stiff peaks form.
- Spread or pipe the whipped cream over the chilled pie.
- Serve immediately.

- For best results, use a high-quality baked pie crust.
- Ensure the filling is completely chilled before adding the whipped cream.
- The pie can be made a day in advance and stored in the refrigerator.
- Garnish with butterscotch chips or a sprinkle of cinnamon, if desired.
