  • 2 cups whole milk
  • 2 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon alcohol-free vanilla extract
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. In a medium saucepan, whisk together the granulated sugar, cocoa powder, cornstarch, and salt.
  2. Gradually whisk in the milk until smooth.
  3. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Boil for 1 minute, stirring.
  4. Remove from heat. In a small bowl, whisk the egg yolks. Gradually whisk about 1/2 cup of the hot chocolate mixture into the egg yolks to temper them.
  5. Pour the egg yolk mixture back into the saucepan with the remaining chocolate mixture, whisking constantly.
  6. Return to medium-low heat and cook for 1 minute more, stirring constantly. Do not boil.
  7. Remove from heat and stir in the butter and alcohol-free vanilla extract until combined.
  8. Pour the chocolate filling into the cooled pie crust. Press plastic wrap directly onto the surface of the filling to prevent a skin from forming.
  9. Refrigerate for at least 4 hours, or until thoroughly chilled and set.
  10. Before serving, beat the heavy cream and powdered sugar in a cold bowl with cold beaters until stiff peaks form.
  11. Spread or pipe the whipped cream over the chilled chocolate pie.
