- 2 cups grated zucchini
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract

- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a large bowl, mix grated zucchini, flour, sugars, oil, eggs, and vanilla.
- Add baking powder, baking soda, cinnamon, and salt. Stir until combined.
- Pour batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before cutting into bars.
Notes
- Drain excess moisture from grated zucchini before using.
- Store in an airtight container for up to 3 days.
- Can be frozen for longer storage.
