- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (4 ounce) can chopped green chilies, undrained
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional)
- 2 (15 ounce) cans great northern beans, rinsed and drained
- 4 cups chicken broth
- 1 cup frozen corn
- 1/2 cup chopped fresh cilantro (for garnish)
- 1/4 cup sour cream or Greek yogurt (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add ground turkey and cook until browned, breaking it up with a spoon. Drain any excess fat.
- Add chopped onion and minced garlic to the pot. Cook until the onion is softened, about 5-7 minutes.
- Stir in the chopped green chilies, cumin, oregano, and cayenne pepper (if using). Cook for 1 minute until fragrant.
- Add the rinsed and drained great northern beans and chicken broth to the pot. Bring to a simmer.
- Reduce heat to low, cover, and let simmer for at least 20 minutes to allow flavors to meld.
- Stir in the frozen corn and cook for an additional 5 minutes, or until heated through.
- Serve hot, garnished with fresh cilantro and a dollop of sour cream or Greek yogurt, if desired.
Notes
- For a thicker chili, you can mash some of the beans against the side of the pot.
- Adjust the amount of cayenne pepper to your preferred spice level.
- This chili freezes well for future meals.
