Ingredients

  • 1 (15-ounce) can cannellini beans, rinsed and drained
  • 1 (5-ounce) can tuna in olive oil, drained
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon Dijon mustard
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a medium bowl, combine the rinsed and drained cannellini beans, drained tuna, finely chopped red onion, and chopped fresh parsley.
  2. In a small bowl, whisk together the lemon juice, extra virgin olive oil, and Dijon mustard.
  3. Pour the dressing over the bean and tuna mixture.
  4. Gently toss until all ingredients are well combined.
  5. Season with salt and black pepper to taste.
  6. Serve immediately or chill for at least 30 minutes for flavors to meld.

Notes

  • For extra flavor, add a pinch of red pepper flakes.
  • Serve over a bed of mixed greens or with crusty bread.
