- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 bag (10 oz) tortilla chips, crushed
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 cup shredded lettuce
- 1 diced tomato
- 1/2 cup sliced black olives
- 1/4 cup chopped cilantro
Instructions
- Preheat oven to 350°F.
- Brown ground beef in a skillet over medium heat.
- Drain excess fat and stir in taco seasoning and water.
- Simmer for 5 minutes.
- Layer crushed tortilla chips in a greased 9×13-inch baking dish.
- Spread seasoned beef evenly over chips.
- Top with black beans and corn.
- Sprinkle shredded cheese over the top.
- Bake for 15-20 minutes until cheese melts.
- Remove from oven and let cool slightly.
- Garnish with sour cream, lettuce, tomato, olives, and cilantro.
Notes
- Use lean ground beef for less grease.
- Add jalapeños for extra spice.
- Substitute ground turkey for a lighter option.
- Store leftovers covered in the fridge for up to 3 days.
