- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 2 cups frozen mixed vegetables
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Cook ground beef until browned.
- Add onion, garlic, and bell pepper. Cook until vegetables soften.
- Stir in cream of mushroom soup, sour cream, salt, and pepper.
- Fold in mixed vegetables and half the cheese.
- Transfer to a baking dish and top with remaining cheese.
- Bake for 25-30 minutes until bubbly and golden.
- Let rest for 5 minutes before serving.
