  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped sun-dried tomatoes (oil-packed, drained)
  • 2 cups fresh spinach

Instructions

  1. Season chicken with Italian seasoning, garlic powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 3-5 minutes. Add garlic and cook for 1 minute more, until fragrant.
  4. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
  5. Stir in heavy cream, Parmesan cheese, and sun-dried tomatoes. Bring to a gentle simmer and cook for 2-3 minutes, until the sauce thickens slightly.
  6. Add spinach to the skillet and cook until wilted, about 1-2 minutes.
  7. Return cooked chicken to the skillet and stir to combine. Serve immediately.

Notes

  • For extra flavor, marinate the chicken for 30 minutes before cooking.
  • Adjust the amount of heavy cream and Parmesan cheese to your liking.
  • This dish can be made ahead of time and reheated gently on the stovetop.
