- 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup chopped yellow onion
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped sun-dried tomatoes (oil-packed, drained)
- 2 cups fresh spinach
Instructions
- Season chicken with Italian seasoning, garlic powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 3-5 minutes. Add garlic and cook for 1 minute more, until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
- Stir in heavy cream, Parmesan cheese, and sun-dried tomatoes. Bring to a gentle simmer and cook for 2-3 minutes, until the sauce thickens slightly.
- Add spinach to the skillet and cook until wilted, about 1-2 minutes.
- Return cooked chicken to the skillet and stir to combine. Serve immediately.
Notes
- For extra flavor, marinate the chicken for 30 minutes before cooking.
- Adjust the amount of heavy cream and Parmesan cheese to your liking.
- This dish can be made ahead of time and reheated gently on the stovetop.
