- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 onion, chopped
- 1 bell pepper (any color), chopped
- 1 (1.25 ounce) packet taco seasoning
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can diced tomatoes, undrained
- 1/2 cup water
- 1/2 cup shredded cheddar cheese
- Optional toppings: sour cream, salsa, avocado, cilantro
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add chopped onion and bell pepper to the skillet. Cook for 5-7 minutes, or until softened.
- Stir in taco seasoning, black beans, diced tomatoes, and water. Bring to a simmer.
- Reduce heat to medium-low, cover, and cook for 10 minutes, stirring occasionally, until heated through and flavors are blended.
- Remove from heat and sprinkle with shredded cheddar cheese. Cover and let stand for 2-3 minutes, or until cheese is melted.
- Serve hot with your favorite toppings.
Notes
- For a spicier dish, add a pinch of red pepper flakes with the taco seasoning.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- Serve in tortillas, lettuce wraps, or over rice.
