This quick and easy turkey taco skillet is a perfect weeknight meal. It’s packed with flavor and comes together in just 30 minutes.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 onion, chopped
  • 1 bell pepper (any color), chopped
  • 1 (1.25 ounce) packet taco seasoning
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1/2 cup water
  • 1/2 cup shredded cheddar cheese
  • Optional toppings: sour cream, salsa, avocado, cilantro

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  2. Add chopped onion and bell pepper to the skillet. Cook for 5-7 minutes, or until softened.
  3. Stir in taco seasoning, black beans, diced tomatoes, and water. Bring to a simmer.
  4. Reduce heat to medium-low, cover, and cook for 10 minutes, stirring occasionally, until heated through and flavors are blended.
  5. Remove from heat and sprinkle with shredded cheddar cheese. Cover and let stand for 2-3 minutes, or until cheese is melted.
  6. Serve hot with your favorite toppings.

Notes

  • For a spicier dish, add a pinch of red pepper flakes with the taco seasoning.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • Serve in tortillas, lettuce wraps, or over rice.
