- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 packet (1 ounce) taco seasoning
- 1 cup water
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup frozen corn
- 1/2 cup salsa
- 1 cup shredded cheddar cheese
- Optional toppings: chopped cilantro, sour cream, avocado, jalapeños
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Stir in the chopped onion and minced garlic. Cook for 3-5 minutes, until the onion softens.
- Add the taco seasoning and water. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to thicken slightly.
- Stir in the black beans, corn, and salsa. Cook for another 5 minutes, or until heated through.
- Sprinkle the shredded cheddar cheese over the top of the skillet. Cover and cook for 2-3 minutes, or until the cheese is melted and bubbly.
- Remove from heat and serve immediately with your favorite toppings.
Notes
- For a spicier skillet, add a pinch of cayenne pepper or a diced jalapeño with the onion.
- You can use ground chicken or beef instead of turkey.
- Serve with warm tortillas, tortilla chips, or over rice.
