- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 cup frozen peas
- 1 cup frozen corn
- 1 cup beef broth
- 1/2 cup tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and black pepper to taste
- 3 pounds potatoes, peeled and quartered
- 1/2 cup milk
- 4 tablespoons butter
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, breaking it up with a spoon. Drain any excess fat.
- Add onion, carrots, and celery to the skillet. Cook until vegetables are softened, about 5-7 minutes.
- Stir in beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary. Bring to a simmer and cook for 10 minutes, allowing the sauce to thicken slightly.
- Stir in frozen peas and corn. Season with salt and pepper to taste.
- Transfer the turkey mixture to a 9×13 inch baking dish.
- While the turkey mixture is simmering, boil the potatoes in a large pot of salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add milk and butter. Mash until smooth and creamy. Season with salt and pepper.
- Spread the mashed potatoes evenly over the turkey mixture in the baking dish. If desired, sprinkle with shredded cheddar cheese.
- Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbling.
- Let stand for 5-10 minutes before serving.
Notes
- For extra flavor, add a pinch of smoked paprika to the turkey filling.
- You can prepare the turkey filling and mashed potatoes ahead of time and assemble before baking.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
