Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 cup beef broth
  • 1/2 cup tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 3 pounds potatoes, peeled and quartered
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, breaking it up with a spoon. Drain any excess fat.
  3. Add onion, carrots, and celery to the skillet. Cook until vegetables are softened, about 5-7 minutes.
  4. Stir in beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary. Bring to a simmer and cook for 10 minutes, allowing the sauce to thicken slightly.
  5. Stir in frozen peas and corn. Season with salt and pepper to taste.
  6. Transfer the turkey mixture to a 9×13 inch baking dish.
  7. While the turkey mixture is simmering, boil the potatoes in a large pot of salted water until tender, about 15-20 minutes.
  8. Drain the potatoes and return them to the pot. Add milk and butter. Mash until smooth and creamy. Season with salt and pepper.
  9. Spread the mashed potatoes evenly over the turkey mixture in the baking dish. If desired, sprinkle with shredded cheddar cheese.
  10. Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbling.
  11. Let stand for 5-10 minutes before serving.

Notes

  • For extra flavor, add a pinch of smoked paprika to the turkey filling.
  • You can prepare the turkey filling and mashed potatoes ahead of time and assemble before baking.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
