Turkey Meatball Subs

These turkey meatball subs are a delicious and lighter alternative to traditional meatball subs. Lean ground turkey is seasoned and rolled into meatballs, then simmered in a flavorful marinara sauce. Served on toasted hoagie rolls with melted mozzarella cheese, they are perfect for a satisfying meal.

Ingredients

  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 24 ounces marinara sauce
  • 4 hoagie rolls
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, oregano, salt, and pepper. Mix until just combined, being careful not to overmix.
  3. Roll the mixture into 1-inch meatballs.
  4. Heat a large skillet over medium-high heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes. They don’t need to be cooked through at this stage.
  5. Pour marinara sauce over the meatballs in the skillet. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until meatballs are cooked through and tender.
  6. While the meatballs are simmering, slice the hoagie rolls lengthwise, but not all the way through. Place them on a baking sheet.
  7. Toast the hoagie rolls in the preheated oven for 3-5 minutes, or until lightly golden.
  8. Spoon the turkey meatballs and sauce into the toasted hoagie rolls.
  9. Top each sub with shredded mozzarella cheese.
  10. Return the subs to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
  11. Serve immediately.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the marinara sauce.
  • You can prepare the meatballs and sauce ahead of time and reheat them when ready to serve.
  • Leftover meatball subs can be stored in the refrigerator for up to 3 days.
