- 1 pound ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 24 ounces marinara sauce
- 4 hoagie rolls
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, oregano, salt, and pepper. Mix until just combined, being careful not to overmix.
- Roll the mixture into 1-inch meatballs.
- Heat a large skillet over medium-high heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes. They don’t need to be cooked through at this stage.
- Pour marinara sauce over the meatballs in the skillet. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until meatballs are cooked through and tender.
- While the meatballs are simmering, slice the hoagie rolls lengthwise, but not all the way through. Place them on a baking sheet.
- Toast the hoagie rolls in the preheated oven for 3-5 minutes, or until lightly golden.
- Spoon the turkey meatballs and sauce into the toasted hoagie rolls.
- Top each sub with shredded mozzarella cheese.
- Return the subs to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
- Serve immediately.
Notes
- For extra flavor, add a pinch of red pepper flakes to the marinara sauce.
- You can prepare the meatballs and sauce ahead of time and reheat them when ready to serve.
- Leftover meatball subs can be stored in the refrigerator for up to 3 days.
