- 1 pound ground turkey (93% lean)
- 1/4 cup finely chopped fresh parsley
- 1/4 cup finely chopped fresh cilantro
- 2 tablespoons finely minced onion
- 1 clove garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon olive oil
Instructions
- In a large bowl, combine the ground turkey, parsley, cilantro, onion, minced garlic, cumin, coriander, paprika, cayenne pepper (if using), black pepper, and salt.
- Mix gently with your hands until just combined. Do not overmix, as this can make the kofta tough.
- Divide the mixture into 8 equal portions. Form each portion around a skewer, shaping it into an elongated oval or cylinder.
- Brush the kofta kebabs lightly with olive oil.
- To grill: Preheat a grill to medium-high heat. Grill the kebabs for 3-4 minutes per side, or until cooked through and lightly browned.
- To bake: Preheat oven to 400°F (200°C). Arrange the kebabs on a baking sheet lined with parchment paper. Bake for 15-20 minutes, flipping halfway through, until cooked through and lightly browned.
- Serve hot with your favorite sides.
Notes
- For extra flavor, you can add a pinch of sumac or a squeeze of lemon juice to the mixture.
- If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
- These kebabs can be prepared ahead of time and refrigerated for up to 24 hours before cooking.
- Serve with a side of yogurt sauce, hummus, or a fresh salad.
