Ingredients

  • 1 pound ground turkey (93% lean)
  • 1/4 cup finely chopped fresh parsley
  • 1/4 cup finely chopped fresh cilantro
  • 2 tablespoons finely minced onion
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil

Instructions

  1. In a large bowl, combine the ground turkey, parsley, cilantro, onion, minced garlic, cumin, coriander, paprika, cayenne pepper (if using), black pepper, and salt.
  2. Mix gently with your hands until just combined. Do not overmix, as this can make the kofta tough.
  3. Divide the mixture into 8 equal portions. Form each portion around a skewer, shaping it into an elongated oval or cylinder.
  4. Brush the kofta kebabs lightly with olive oil.
  5. To grill: Preheat a grill to medium-high heat. Grill the kebabs for 3-4 minutes per side, or until cooked through and lightly browned.
  6. To bake: Preheat oven to 400°F (200°C). Arrange the kebabs on a baking sheet lined with parchment paper. Bake for 15-20 minutes, flipping halfway through, until cooked through and lightly browned.
  7. Serve hot with your favorite sides.

Notes

  • For extra flavor, you can add a pinch of sumac or a squeeze of lemon juice to the mixture.
  • If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
