- 1 pound ground turkey
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (8 ounce) can tomato sauce
- 1/2 cup beef broth
- 2 tablespoons paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bay leaf
- 1/2 cup sour cream (for serving, optional)
- Cooked egg noodles or rice (for serving)
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat. Add ground turkey and cook until browned, breaking it up with a spoon. Drain any excess fat.
- Add chopped onion to the skillet and cook until softened, about 5-7 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add diced tomatoes, tomato sauce, beef broth, paprika, oregano, salt, pepper, and bay leaf to the skillet. Stir to combine.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for at least 20 minutes, or up to 45 minutes, stirring occasionally. This allows the flavors to meld.
- Remove the bay leaf before serving.
- Serve hot over cooked egg noodles or rice. Garnish with a dollop of sour cream, if desired.
Notes
- For a spicier goulash, add a pinch of cayenne pepper with the paprika.
- You can prepare this dish ahead of time and reheat it. The flavors often improve the next day.
- Ground chicken can be used as an alternative to ground turkey.
- If you prefer a thicker sauce, you can simmer it uncovered for a longer period.
