  • Cooked egg noodles or rice (for serving)

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat. Add ground turkey and cook until browned, breaking it up with a spoon. Drain any excess fat.
  2. Add chopped onion to the skillet and cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Add diced tomatoes, tomato sauce, beef broth, paprika, oregano, salt, pepper, and bay leaf to the skillet. Stir to combine.
  5. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for at least 20 minutes, or up to 45 minutes, stirring occasionally. This allows the flavors to meld.
  6. Remove the bay leaf before serving.
  7. Serve hot over cooked egg noodles or rice. Garnish with a dollop of sour cream, if desired.

  • For a spicier goulash, add a pinch of cayenne pepper with the paprika.
