This Turkey Egg Roll in a Bowl recipe offers a delicious and healthy alternative to traditional egg rolls. It features ground turkey, coleslaw mix, and a flavorful sauce, all cooked in one pan for an easy weeknight meal.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 tablespoon sesame oil
  • 1 pound ground turkey
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 (14 ounce) package coleslaw mix
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sriracha sauce (optional)
  • 2 green onions, sliced, for garnish
  • 1 tablespoon sesame seeds, for garnish

Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  3. Stir in chopped onion, minced garlic, and grated ginger. Cook for 3-5 minutes, until the onion softens.
  4. Add the coleslaw mix to the skillet. Cook for 5-7 minutes, stirring occasionally, until the cabbage is tender-crisp.
  5. In a small bowl, whisk together soy sauce, rice vinegar, honey, and sriracha (if using).
  6. Pour the sauce over the turkey and coleslaw mixture. Stir to coat everything evenly. Cook for 1-2 minutes, allowing the sauce to thicken slightly.
  7. Remove from heat. Garnish with sliced green onions and sesame seeds before serving.

Notes

  • You can substitute ground chicken or beef for the turkey.
  • For extra vegetables, add shredded carrots or bell peppers.
  • Adjust the amount of sriracha to your preferred spice level.
  • Serve as is, or over rice or cauliflower rice for a more substantial meal.
