These turkey cabbage rolls are a delicious and healthy meal. They feature a savory turkey and rice filling wrapped in tender cabbage leaves, baked in a rich tomato sauce.

Ingredients

  • 1 large head green cabbage (about 2 1/2 pounds)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 1 (14.5 ounce) can crushed tomatoes
  • 1 (8 ounce) can tomato sauce
  • 1/2 cup uncooked white rice
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup water or broth

Instructions

  1. Core the cabbage and carefully remove 12 large outer leaves.
  2. Bring a large pot of salted water to a boil. Add cabbage leaves and blanch for 3-5 minutes, or until pliable. Drain and let cool.
  3. In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Add ground turkey to the skillet and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  5. In a large bowl, combine the cooked turkey mixture, 1/2 cup crushed tomatoes, 1/4 cup tomato sauce, uncooked rice, parsley, oregano, salt, and pepper. Mix well.
  6. Preheat oven to 350°F (175°C).
  7. Lay a blanched cabbage leaf flat. Place about 1/4 cup of the turkey mixture near the stem end. Fold in the sides and roll up tightly. Repeat with remaining cabbage leaves and filling.
  8. Pour the remaining crushed tomatoes and tomato sauce into a 9×13 inch baking dish. Stir in the water or broth.
  9. Arrange the cabbage rolls seam-side down in the baking dish.
  10. Cover the baking dish tightly with foil and bake for 1 hour.
  11. Uncover and bake for an additional 15-20 minutes, or until the cabbage is tender and the rice is cooked through.
  12. Serve hot.

Notes

  • You can use ground beef or lamb instead of turkey.
  • For extra flavor, add a pinch of red pepper flakes to the sauce.
  • These cabbage rolls freeze well. Allow them to cool completely before freezing in an airtight container.
  • Serve with a dollop of sour cream or plain yogurt, if desired.
