- 1 large head green cabbage (about 2 1/2 pounds)
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound ground turkey
- 1 (14.5 ounce) can crushed tomatoes
- 1 (8 ounce) can tomato sauce
- 1/2 cup uncooked white rice
- 1/4 cup fresh parsley, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup water or broth
Instructions
- Core the cabbage and carefully remove 12 large outer leaves.
- Bring a large pot of salted water to a boil. Add cabbage leaves and blanch for 3-5 minutes, or until pliable. Drain and let cool.
- In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Add ground turkey to the skillet and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- In a large bowl, combine the cooked turkey mixture, 1/2 cup crushed tomatoes, 1/4 cup tomato sauce, uncooked rice, parsley, oregano, salt, and pepper. Mix well.
- Preheat oven to 350°F (175°C).
- Lay a blanched cabbage leaf flat. Place about 1/4 cup of the turkey mixture near the stem end. Fold in the sides and roll up tightly. Repeat with remaining cabbage leaves and filling.
- Pour the remaining crushed tomatoes and tomato sauce into a 9×13 inch baking dish. Stir in the water or broth.
- Arrange the cabbage rolls seam-side down in the baking dish.
- Cover the baking dish tightly with foil and bake for 1 hour.
- Uncover and bake for an additional 15-20 minutes, or until the cabbage is tender and the rice is cooked through.
- Serve hot.
Notes
- You can use ground beef or lamb instead of turkey.
- For extra flavor, add a pinch of red pepper flakes to the sauce.
- These cabbage rolls freeze well. Allow them to cool completely before freezing in an airtight container.
- Serve with a dollop of sour cream or plain yogurt, if desired.
