A quick and easy, protein-packed tuna and chickpea salad, perfect for a light lunch or dinner.

Ingredients

  • 2 cans (5 ounces each) tuna, drained
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1/4 cup chopped red onion
  • 1/4 cup chopped celery
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste

Instructions

  1. In a medium bowl, flake the drained tuna with a fork.
  2. Add the rinsed and drained chickpeas, chopped red onion, and chopped celery to the bowl.
  3. In a small bowl, whisk together the mayonnaise, Dijon mustard, and fresh lemon juice.
  4. Pour the dressing over the tuna and chickpea mixture.
  5. Stir gently to combine everything.
  6. Season with salt and black pepper to taste.
  7. Serve immediately or chill for later.

Notes

  • For extra flavor, add a pinch of dried dill or paprika.
  • Serve this salad on bread, lettuce cups, or with crackers.
