Easy and quick quesadillas made in a toaster oven.

Ingredients

  • 2 large flour tortillas
  • 1 cup shredded cheese (cheddar, Monterey Jack, or mix)
  • 1/2 cup cooked protein (chicken, beef, or beans)
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1 tbsp butter or oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the toaster oven to 400°F (200°C).
  2. Place one tortilla on a baking sheet.
  3. Sprinkle half the cheese evenly over the tortilla.
  4. Add the protein, bell peppers, and onions.
  5. Top with the remaining cheese and the second tortilla.
  6. Brush the top with butter or oil and sprinkle with salt and pepper.
  7. Bake for 5-7 minutes, or until the cheese melts and the tortilla is golden.
  8. Flip carefully and bake for another 3-4 minutes.
  9. Remove, slice, and serve warm.

Notes

  • Use any leftover meat or veggies for faster prep.
