- 2 large flour tortillas
- 1 cup shredded cheese (cheddar, Monterey Jack, or mix)
- 1/2 cup cooked protein (chicken, beef, or beans)
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1 tbsp butter or oil
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat the toaster oven to 400°F (200°C).
- Place one tortilla on a baking sheet.
- Sprinkle half the cheese evenly over the tortilla.
- Add the protein, bell peppers, and onions.
- Top with the remaining cheese and the second tortilla.
- Brush the top with butter or oil and sprinkle with salt and pepper.
- Bake for 5-7 minutes, or until the cheese melts and the tortilla is golden.
- Flip carefully and bake for another 3-4 minutes.
- Remove, slice, and serve warm.
