- 1 cup strong black tea, cooled
- 1 1/2 cups mixed dried fruit (raisins, currants, sultanas, candied peel)
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground mixed spice
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup granulated sugar
- 1 large egg, beaten
Instructions
- In a large bowl, combine the cooled tea and mixed dried fruit. Let it soak for at least 4 hours, or preferably overnight, to plump up the fruit.
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a separate bowl, whisk together the flour, baking powder, mixed spice, cinnamon, and nutmeg.
- Stir the sugar into the soaked fruit mixture.
- Add the beaten egg to the fruit mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the brack cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Slice and serve with butter.
Notes
- For best results, soak the fruit overnight. This allows the fruit to absorb more tea, making the brack moister.
- You can add a clean coin wrapped in parchment paper to the batter before baking as a traditional Halloween custom.
- Store leftover brack in an airtight container at room temperature for up to 3-4 days, or freeze for longer storage.
