- 1 lb ground beef
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1/2 cup beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until softened.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in sweet potatoes, beef broth, salt, and pepper. Cook for 5 minutes.
- Transfer mixture to a baking dish. Top with shredded cheddar cheese.
- Bake for 25-30 minutes until sweet potatoes are tender and cheese is melted.
Notes
- For extra flavor, add 1 tsp of paprika or cumin.
- Store leftovers in an airtight container for up to 3 days.
