  • 6 oz. sweetened berry blue gelatin
  • 2/3 cup boiling water
  • 1/2 cup Greek yogurt (cold)
  • 1 1/2 cup fresh blueberries
  • 8 oz. cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 3/4 cups whipped cream (Cool Whip or homemade whipped cream)
  • 6 oz. Strawberry Jello
  • 1 1/4 cup boiling water + 3/4 cup iced water
  • 4 cups sliced strawberries
  • 2 cups whipped cream (Cool Whip or homemade whipped cream)
  • Red, white, and blue sprinkles or stars confetti (for topping)

Instructions

  1. To make the crust, grind whole Oreo cookies with the filling in a food processor to make fine crumbs. Add sprinkles and stir with a fork.
  2. Add melted butter and stir until evenly moistened, then press the mixture into the bottom of a 9×13-inch dish. Freeze to firm while making the next layer.
  3. For the blueberry cheesecake layer, dissolve berry blue Jello in 2/3 cup boiling water. Set aside to cool.
  4. Beat softened cream cheese, powdered sugar, and vanilla until smooth. Add 1 1/2 cups Cool Whip and mix to combine.
  5. Pulse Greek yogurt and fresh blueberries in a food processor. Pour into the cooled Jello and whisk to combine. Mix in the cream cheese mixture.
  6. Spread over the chilled crust. Refrigerate or freeze to set.
  7. For the strawberry Jello layer, dissolve strawberry Jello in boiling water. Add iced water and stir. Let cool completely.
  8. Place sliced strawberries over the cream cheese layer and pour cooled Jello over them.
  9. Refrigerate until firm (4-6 hours or overnight).
  10. Top with whipped cream and garnish with sprinkles or fresh fruit.
