Ingredients

  • 500g all-purpose flour
  • 100g sugar
  • 10g active dry yeast
  • 250ml warm milk
  • 3 eggs
  • 100g butter, melted
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 100g raisins
  • Zest of 1 lemon
  • Zest of 1 orange

Instructions

  1. Dissolve yeast in warm milk with a pinch of sugar. Let sit for 10 minutes until frothy.
  2. Mix flour, sugar, and salt in a large bowl.
  3. Add yeast mixture, eggs, melted butter, vanilla, and citrus zest. Knead until smooth.
  4. Fold in raisins. Cover and let rise for 2 hours or until doubled.
  5. Shape dough into a round loaf. Place in a greased pan.
  6. Let rise for another hour.
  7. Bake at 180°C (350°F) for 40-45 minutes until golden.
  8. Cool before decorating with icing or traditional symbols.
