A light and creamy strawberry mousse made with cream cheese or coconut cream, yogurt, and fresh strawberries.

Ingredients

  • 8 oz cream cheese or coconut cream
  • 4 oz yogurt or additional cream cheese or coconut cream
  • 1 cup powdered sugar or sugar-free alternative
  • 5 medium strawberries
  • 1/4 tsp vanilla bean paste (optional)

Instructions

  1. If using cream cheese, let it come to room temperature. If using coconut cream, check that it is thick and creamy.
  2. Remove stems from strawberries and blend or mash until pureed.
  3. Add all remaining ingredients and blend until smooth using a food processor, blender, or hand mixer.
  4. Transfer to serving dishes and refrigerate. The mousse will thicken as it chills.

Notes

  • Ensure coconut cream is thick and creamy; hard or flaky coconut cream will not work well.
  • Chill the mousse for best texture.
