- 2 medium sweet potatoes, diced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes and peppers with 1 tbsp olive oil, garlic powder, smoked paprika, salt, and black pepper.
- Spread vegetables on a baking sheet and roast for 20-25 minutes until tender.
- Heat remaining olive oil in a skillet over medium-high heat.
- Add steak bites and cook for 3-4 minutes per side until browned and cooked to your preference.
- Combine steak bites with roasted vegetables.
- Garnish with fresh parsley before serving.
