- 4 cups yellow squash, sliced
- 1 small onion, chopped
- 1 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 1 egg, beaten
- 1/2 cup breadcrumbs
- 2 tbsp butter, melted
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 350°F.
- Boil squash and onion in water for 5 minutes. Drain well.
- Mix squash, onion, cheese, mayonnaise, egg, salt, and pepper in a bowl.
- Spread mixture into a greased baking dish.
- Combine breadcrumbs and melted butter, then sprinkle over the squash mixture.
- Bake for 25 minutes or until golden brown.
Notes
- Use fresh yellow squash for best results.
- You can substitute mayonnaise with sour cream.
- Add a dash of hot sauce for extra flavor.
