A classic Southern squash casserole made with yellow squash, cheese, and a crispy topping.

Ingredients

  • 4 cups yellow squash, sliced
  • 1 small onion, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1 egg, beaten
  • 1/2 cup breadcrumbs
  • 2 tbsp butter, melted
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 350°F.
  2. Boil squash and onion in water for 5 minutes. Drain well.
  3. Mix squash, onion, cheese, mayonnaise, egg, salt, and pepper in a bowl.
  4. Spread mixture into a greased baking dish.
  5. Combine breadcrumbs and melted butter, then sprinkle over the squash mixture.
  6. Bake for 25 minutes or until golden brown.

Notes

  • Use fresh yellow squash for best results.
  • You can substitute mayonnaise with sour cream.
  • Add a dash of hot sauce for extra flavor.
