- 2 cups dried black-eyed peas
- 6 cups water
- 1 onion, diced
- 2 cloves garlic, minced
- 1 smoked ham hock or 4 slices bacon, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 1 bay leaf
Instructions
- Rinse the black-eyed peas and pick out any debris.
- In a large pot, combine peas, water, onion, garlic, ham hock or bacon, salt, black pepper, cayenne pepper, and bay leaf.
- Bring to a boil, then reduce heat to a simmer.
- Cover and cook for 1 to 1.5 hours, stirring occasionally, until peas are tender.
- Remove the bay leaf and ham hock if used. Serve hot.
Notes
- Soak the peas overnight for faster cooking.
- Add extra water if needed while cooking.
- For a vegetarian version, omit the ham hock or bacon.
