- 2 roasted hatch chiles, chopped

- 1/4 tsp black pepper
- 1/4 cup chopped cilantro
- 1 tbsp lime juice
Instructions
- Heat butter in a skillet over medium heat.
- Add corn kernels and cook for 5 minutes until tender.
- Stir in chopped hatch chiles and cook for 2 more minutes.
- Season with salt and black pepper.
- Remove from heat and mix in cilantro and lime juice.
