Ingredients

  • 1 pound ground turkey
  • 1 large onion, chopped
  • 1 bell pepper (any color), chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (4 ounce) can diced green chilies, undrained
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup water or broth

Instructions

  1. Brown the ground turkey in a large skillet over medium heat. Drain any excess fat.
  2. Transfer the browned turkey to a 6-quart slow cooker.
  3. Add the chopped onion, bell pepper, and minced garlic to the slow cooker.
  4. Stir in the crushed tomatoes, kidney beans, black beans, corn, and diced green chilies.
  5. Add the chili powder, ground cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper.
  6. Pour in the water or broth.
  7. Stir all ingredients together until well combined.
  8. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  9. Stir before serving.
  10. Serve hot with your favorite toppings.

Notes

  • For extra spice, add more cayenne pepper or a pinch of red pepper flakes.
  • Top with shredded cheese, sour cream, fresh cilantro, or chopped avocado.
  • This chili freezes well for future meals.
