- 1 pound ground turkey
- 1 large onion, chopped
- 1 bell pepper (any color), chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (4 ounce) can diced green chilies, undrained
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt to taste
- Black pepper to taste
- 1/2 cup water or broth
Instructions
- Brown the ground turkey in a large skillet over medium heat. Drain any excess fat.
- Transfer the browned turkey to a 6-quart slow cooker.
- Add the chopped onion, bell pepper, and minced garlic to the slow cooker.
- Stir in the crushed tomatoes, kidney beans, black beans, corn, and diced green chilies.
- Add the chili powder, ground cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper.
- Pour in the water or broth.
- Stir all ingredients together until well combined.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Stir before serving.
- Serve hot with your favorite toppings.
Notes
- For extra spice, add more cayenne pepper or a pinch of red pepper flakes.
- Top with shredded cheese, sour cream, fresh cilantro, or chopped avocado.
- This chili freezes well for future meals.
- Adjust the consistency by adding more water or broth if desired.
