Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  2. Add onion, bell pepper, and garlic to the skillet. Cook for 3 minutes.
  3. Transfer the beef mixture to the slow cooker.
  4. Add black beans, kidney beans, corn, diced tomatoes, chili powder, cumin, salt, and black pepper. Stir well.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Top with shredded cheese before serving.

Notes

  • Use lean ground beef for less grease.
  • You can substitute pinto beans for black beans.
  • Top with sour cream or avocado if desired.
