- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add onion, bell pepper, and garlic to the skillet. Cook for 3 minutes.
- Transfer the beef mixture to the slow cooker.
- Add black beans, kidney beans, corn, diced tomatoes, chili powder, cumin, salt, and black pepper. Stir well.
- Cover and cook on low for 6 hours or high for 3 hours.
- Top with shredded cheese before serving.
Notes
- Use lean ground beef for less grease.
- You can substitute pinto beans for black beans.
- Top with sour cream or avocado if desired.
