Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 potatoes, cubed
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Place chicken thighs at the bottom of the slow cooker.
  2. Add chopped carrots, celery, onion, garlic, and potatoes.
  3. Pour in chicken broth.
  4. Season with thyme, rosemary, bay leaf, salt, and pepper.
  5. Cover and cook on low for 6-7 hours or high for 4 hours.
  6. Remove bay leaf before serving.

Notes

  • Shred the chicken before serving if preferred.
  • Add frozen peas or corn for extra vegetables.
