Short Rib Chili with Tender Beef

  • 2 tablespoons olive oil
  • 3 pounds boneless beef short ribs, cut into 1-inch pieces
  • 1 large onion, chopped
  • 2 bell peppers (any color), chopped
  • 4 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes with green chilies, undrained
  • 1/4 cup chili powder
  • 2 tablespoons ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional)
  • 2 cups beef broth
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped fresh cilantro, sliced green onions

Instructions

  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
  2. Brown short rib pieces in batches until seared on all sides. Remove ribs from the pot and set aside.
  3. Add onion and bell peppers to the pot and cook until softened, about 5-7 minutes.
  4. Stir in minced garlic, chili powder, cumin, smoked paprika, oregano, and cayenne pepper (if using). Cook for 1 minute until fragrant.
  5. Return short ribs to the pot. Add crushed tomatoes, kidney beans, black beans, diced tomatoes with green chilies, and beef broth.
  6. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for at least 2-3 hours, or until the short ribs are very tender and easily shreddable.
  7. Season with salt and black pepper to taste.
  8. Serve hot with your favorite toppings.

Notes

  • For a spicier chili, add more cayenne pepper or a pinch of red pepper flakes.
  • You can prepare this chili a day in advance; the flavors often improve overnight.
  • This chili freezes well for future meals.
