Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1.5 pounds ground lamb
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth
  • 1/2 cup tomato paste
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 pounds russet potatoes, peeled and quartered
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Add ground lamb to the skillet. Cook, breaking it up with a spoon, until browned. Drain any excess fat.
  4. Stir in minced garlic, flour, beef broth, tomato paste, rosemary, thyme, salt, and pepper. Bring to a simmer and cook for 5-7 minutes, or until the sauce thickens.
  5. While the lamb mixture simmers, boil potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain well.
  6. Mash the cooked potatoes with milk and butter until smooth. Season with salt and pepper to taste. Stir in Parmesan cheese if using.
  7. Spread the mashed potatoes evenly over the lamb mixture in the skillet. You can use a fork to create decorative ridges on top.
  8. Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Let stand for 10 minutes before serving.

Notes

  • For extra flavor, add a splash of red wine vinegar to the lamb mixture.
  • You can prepare the lamb filling and mashed potatoes ahead of time and assemble before baking.
  • Leftovers can be stored in the refrigerator for up to 3 days.
