  • 1 tablespoon olive oil

  • 1/2 cup shredded red cabbage
  • 1/2 cup sliced cucumber
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup corn kernels
  • 1/4 cup black beans, rinsed and drained
  • 2 tablespoons lime juice
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon honey
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • Pinch of cayenne pepper (optional)
  • Sliced avocado for garnish
  • Lime wedges for serving

Instructions

  1. Pat the tuna steak dry with paper towels. Season generously with salt and black pepper.
  2. Heat 1 tablespoon of olive oil in a non-stick skillet over medium-high heat until shimmering.
  3. Sear the tuna steak for 1-2 minutes per side for rare to medium-rare, or longer for desired doneness. Remove from skillet and let rest for a few minutes before slicing.
  4. While the tuna rests, prepare the dressing. In a small bowl, whisk together the lime juice, extra virgin olive oil, honey, chili powder, ground cumin, and cayenne pepper (if using).
  5. Assemble the bowls: Divide the cooked brown rice among two serving bowls.
  6. Arrange the shredded red cabbage, sliced cucumber, chopped cilantro, corn kernels, and black beans around the rice in each bowl.
  7. Slice the seared tuna against the grain into 1/2-inch thick pieces. Place the tuna on top of the vegetables.
  8. Drizzle the dressing over the entire bowl.
  9. Garnish with sliced avocado and serve with lime wedges.

Notes

  • For a spicier kick, add more cayenne pepper to the dressing.
  • You can prepare the rice and chop the vegetables ahead of time for quicker assembly.
