- 2 honeynut squashes
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the honeynut squashes in half lengthwise and scoop out the seeds.
- Drizzle olive oil over the cut sides of the squash and season with salt, pepper, and thyme.
- Place the squash halves cut-side down on a baking sheet lined with parchment paper.
- Roast for 30-35 minutes or until the flesh is tender and caramelized.
- Remove from the oven and let cool slightly before serving.
Notes
- You can store leftovers in an airtight container in the fridge for up to 3 days.
- For extra flavor, drizzle with honey or maple syrup before serving.
