A simple and flavorful marinade for chicken with Mexican-inspired spices.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup lime juice
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a bowl, mix lime juice, olive oil, garlic, cumin, paprika, chili powder, salt, and pepper.
  2. Place chicken in a resealable bag or shallow dish.
  3. Pour marinade over chicken, coating evenly.
  4. Seal or cover and refrigerate for at least 30 minutes (or up to 4 hours).
  5. Grill, bake, or pan-cook chicken until fully cooked (165°F internal temperature).
  6. Garnish with fresh cilantro before serving.

Notes

  • For extra flavor, let the chicken marinate for 2-4 hours.
  • Adjust chili powder for more or less heat.
  • Works well with chicken thighs or tenders.
