- 1 cup pumpkin puree
- 2 cups all-purpose flour

- 1 egg
- 1 tsp vanilla extract

- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup chocolate chips
- 1 cup mini marshmallows
- 1/2 cup crushed graham crackers
Instructions
- Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
- Mix pumpkin puree, sugars, melted butter, egg, and vanilla in large bowl.
- Combine flour, cinnamon, nutmeg, baking soda, and salt in separate bowl.
- Gradually add dry ingredients to wet ingredients, mixing well.
- Fold in chocolate chips, marshmallows, and graham cracker pieces.
- Drop tablespoon-sized portions onto baking sheet.
- Bake for 12-15 minutes until edges are golden.
- Cool on baking sheet for 5 minutes before transferring to wire rack.
Notes
- Store in airtight container for up to 5 days
- For crispier cookies, bake an extra 2 minutes
- Substitute white chocolate chips for variety
