  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • For frosting: 1/4 cup butter, 1/2 cup brown sugar, 2 tbsp milk, 1 cup powdered sugar

Instructions

  1. Preheat oven to 350°F. Grease an 8-inch square pan.
  2. Whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
  3. In another bowl, mix pumpkin puree, sugars, oil, egg, and vanilla until smooth.
  4. Combine wet and dry ingredients. Stir until just blended.
  5. Pour batter into the pan. Bake for 20-25 minutes until a toothpick comes out clean.
  6. For frosting, melt butter in a saucepan. Add brown sugar and milk. Bring to a boil, then remove from heat.
  7. Stir in powdered sugar until smooth. Spread over cooled bars.

  • Let bars cool completely before frosting.
