  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil for frying

Instructions

  1. In a large bowl, combine the mashed potatoes, flour, shredded cheddar cheese, chopped green onions, beaten egg, garlic powder, and black pepper.
  2. Mix well until all ingredients are evenly incorporated.
  3. Form the mixture into small patties, about 1/2 inch thick.
  4. Heat the vegetable oil in a large skillet over medium heat.
  5. Carefully place the potato cakes in the hot oil. Do not overcrowd the skillet.
  6. Cook for 3-4 minutes per side, or until golden brown and crispy.
  7. Remove the potato cakes from the skillet and place them on a paper towel-lined plate to drain excess oil.
