- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1/4 cup unsweetened applesauce
- 1/4 cup vegetable oil
- 1/2 cup mashed cooked potato (about 1 medium potato)
- 1 cup finely diced apples (about 1 medium apple, peeled and cored)
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate medium bowl, whisk together the granulated sugar, brown sugar, egg, applesauce, and vegetable oil until well combined.
- Stir in the mashed potato until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the diced apples and chopped nuts (if using).
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For best results, use a starchy potato like Russet for mashing.
- You can use any type of apple you prefer, such as Granny Smith for a tart flavor or Fuji for a sweeter bread.
- Store leftover bread in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 5 days.
- This bread freezes well. Wrap tightly in plastic wrap and then in foil for up to 3 months.
