Ingredients

  • 1 lb ground beef
  • 1 cup uncooked white rice
  • 1 onion, diced
  • 2 bell peppers, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef in a large skillet over medium heat. Drain excess fat.
  3. Add onion and bell peppers to the skillet. Cook until softened.
  4. Stir in uncooked rice, diced tomatoes, tomato sauce, garlic powder, salt, pepper, and oregano.
  5. Transfer mixture to a greased 9×13-inch baking dish.
  6. Cover with foil and bake for 45 minutes.
  7. Remove foil, sprinkle cheese on top, and bake for another 10 minutes until cheese melts.
  8. Let rest for 5 minutes before serving.

Notes

  • Use lean ground beef for a lighter version.
  • Cook rice separately if you prefer a firmer texture.
  • Swap cheddar for mozzarella if desired.
