- 1 tablespoon unsalted butter
- 2 large yellow onions, thinly sliced
- 1 pound ground beef, 80/20 lean
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 slices rye bread
- 4 slices Swiss cheese
- 4 slices cheddar cheese
- Mayonnaise or butter for spreading
Instructions
- Melt butter in a large skillet over medium-low heat. Add sliced onions and cook, stirring occasionally, for 20-25 minutes, or until deeply caramelized and tender. Remove from skillet and set aside.
- Form ground beef into four equal patties. Season both sides with salt and pepper.
- Increase heat to medium-high in the same skillet. Cook patties for 3-5 minutes per side, or until desired doneness. Remove from skillet.
- Spread mayonnaise or butter on one side of each slice of rye bread.
- Place four slices of bread, mayonnaise-side down, in the skillet. Top each with a slice of Swiss cheese, a cooked patty, a generous spoonful of caramelized onions, and a slice of cheddar cheese. Finish with the remaining four slices of bread, mayonnaise-side up.
- Cook for 3-5 minutes per side, or until the bread is golden brown and the cheese is melted and bubbly.
- Serve immediately.
Notes
- For extra flavor, add a splash of beef broth or water to the onions while caramelizing.
- You can use any cheese you prefer, such as provolone or American.
- To make ahead, caramelize the onions and cook the patties. Reheat before assembling.
