- 2 chicken breasts
- 1 cup rice
- 2 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C)
- Season chicken with salt, pepper, and paprika
- Heat oil in oven-safe pan and brown chicken for 3 minutes per side
- Remove chicken and sauté onion and garlic for 2 minutes
- Add rice and broth, stir well
- Place chicken on top of rice mixture
- Bake covered for 25 minutes
- Remove cover and bake 10 more minutes
Notes
- Use long-grain rice for best results
- Check chicken internal temperature reaches 165°F (74°C)
- Let rest 5 minutes before serving
