Ingredients

  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Instructions

  1. Brown ground beef in a large skillet over medium heat.
  2. Add onion, bell pepper, and garlic. Cook until softened.
  3. Stir in rice, beef broth, salt, pepper, and paprika.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes.
  5. Remove from heat and sprinkle cheese on top. Cover until cheese melts.
  6. Serve hot.
