- 1 lb ground beef
- 1 cup uncooked white rice
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
Instructions
- Brown ground beef in a large skillet over medium heat.
- Add onion, bell pepper, and garlic. Cook until softened.
- Stir in rice, beef broth, salt, pepper, and paprika.
- Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes.
- Remove from heat and sprinkle cheese on top. Cover until cheese melts.
- Serve hot.
Notes
- Use lean ground beef for less grease.
- Feel free to add other vegetables like corn or peas.
- Store leftovers in an airtight container for up to 3 days.
