A simple one-pot dish with tender chicken and fluffy rice that cooks without needing to check on it.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 cups long-grain white rice
  • 2.5 cups chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat.
  3. Season chicken with salt, pepper, and paprika.
  4. Sear chicken for 3 minutes per side, then remove from skillet.
  5. Add onion and garlic to the skillet, cook until softened.
  6. Stir in rice, then pour in chicken broth.
  7. Place chicken on top of the rice.
  8. Cover with a tight-fitting lid or foil and bake for 45 minutes.
  9. Remove from oven and let rest for 5 minutes before serving.

Notes

  • Use a heavy-bottomed skillet for even cooking.
  • Do not lift the lid during baking to keep steam inside.
  • Adjust seasoning to taste.
