Ingredients

  • 500g white fish fillets (cut into chunks)
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 bell pepper (sliced)
  • 2 tomatoes (chopped)
  • 200ml coconut milk
  • 2 tbsp olive oil
  • 1 lime (juiced)
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh cilantro (chopped)

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add bell pepper and tomatoes, cook for 5 minutes.
  4. Stir in paprika, salt, and black pepper.
  5. Place fish chunks in the pot.
  6. Pour coconut milk and lime juice over the fish.
  7. Simmer gently for 15 minutes.
  8. Garnish with cilantro before serving.
