  • 1 1/2 cups sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 cup pumpkin puree
  • 1/3 cup water

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. Mix flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger in a bowl.
  3. In another bowl, beat sugar, oil, and eggs together. Stir in pumpkin and water.
  4. Combine wet and dry ingredients, mixing just until moistened.
  5. Pour batter into prepared loaf pan.
  6. Bake for 60-70 minutes until a toothpick inserted comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack.

Notes

  • Use fresh pumpkin puree for best results.
  • Can be stored at room temperature for 3 days or frozen for up to 3 months.
