Ingredients

  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F. Grease a 9-inch cake pan.
  2. In a bowl, mix flour, baking soda, and salt.
  3. In another bowl, beat butter and sugar until fluffy. Add eggs and vanilla.
  4. Mix in mashed bananas. Alternate adding dry ingredients and buttermilk.
  5. Pour batter into pan. Bake for 30-35 minutes. Let cool.
  6. For frosting, beat cream cheese and butter. Add powdered sugar, lemon zest, and juice.
  7. Spread frosting over cooled cake.
