- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tbsp lemon zest
- 1 tbsp lemon juice
Instructions
- Preheat oven to 350°F. Grease a 9-inch cake pan.
- In a bowl, mix flour, baking soda, and salt.
- In another bowl, beat butter and sugar until fluffy. Add eggs and vanilla.
- Mix in mashed bananas. Alternate adding dry ingredients and buttermilk.
- Pour batter into pan. Bake for 30-35 minutes. Let cool.
- For frosting, beat cream cheese and butter. Add powdered sugar, lemon zest, and juice.
- Spread frosting over cooled cake.
