Ingredients

  • 1 can (14.5 oz) diced tomatoes
  • 1/4 cup raisins
  • 1/4 cup sliced green olives
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil
  • 1/2 cup beef broth

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it up with a spoon.
  3. Add onion and garlic, cook for 2 minutes until softened.
  4. Stir in potatoes, carrots, cumin, oregano, salt, and pepper. Cook for 5 minutes.
  5. Add diced tomatoes, raisins, olives, and beef broth. Stir well.
  6. Cover and simmer for 20 minutes or until potatoes are tender.
  7. Uncover and cook for 5 more minutes to thicken the sauce.
  8. Serve hot with rice or tortillas.

Notes

  • You can substitute ground turkey for beef.
  • Add more broth if you prefer a saucier consistency.
