- 1 lb ground beef
- 1 medium potato, diced
- 1 medium carrot, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1/4 cup raisins
- 1/4 cup sliced green olives
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp vegetable oil
- 1/2 cup beef broth
Instructions
- Heat oil in a large skillet over medium heat.
- Add ground beef and cook until browned, breaking it up with a spoon.
- Add onion and garlic, cook for 2 minutes until softened.
- Stir in potatoes, carrots, cumin, oregano, salt, and pepper. Cook for 5 minutes.
- Add diced tomatoes, raisins, olives, and beef broth. Stir well.
- Cover and simmer for 20 minutes or until potatoes are tender.
- Uncover and cook for 5 more minutes to thicken the sauce.
- Serve hot with rice or tortillas.
Notes
- You can substitute ground turkey for beef.
- Add more broth if you prefer a saucier consistency.
- Tastes even better the next day as flavors develop.
