- 1 cup crumbled cotija cheese
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1 lime, juiced
- 1/4 cup chopped cilantro
- 1 jalapeño, finely diced (optional)
- Salt to taste
Instructions
- In a large bowl, mix mayonnaise, sour cream, lime juice, chili powder, smoked paprika, and salt.
- Add corn kernels and stir until well-coated.
- Fold in cotija cheese, cilantro, and jalapeño (if using).
- Chill for 30 minutes before serving.
- Serve with tortilla chips or fresh vegetables.
Notes
- For extra flavor, grill the corn before mixing.
- Adjust spice level by adding more or less jalapeño.
- Store leftovers in an airtight container for up to 2 days.
